If/when the knight does bring out the sword you just need to block and try to make the AI make the mistake of falling off the edge. You need to run full fucking sprint up the inclines like a mother fucker with your shield out and then immediately turn right and just take a few shots to the chest like a boss because if you get your shield out that fucker is knocking you off the building.
